Ingredients:

- Rice (or orzo pasta) - 150 g

1. Prepare the products according to the list. It is better to take the chicken chilled and it is desirable that it is not a chicken breast, but, for example, legs, legs or wings, then the soup will turn out to be more rich. Instead of olive oil, you can take sunflower oil, rice can be replaced with orzo pasta.
2. Take a lemon, wash it well with a fruit detergent or scald it with boiling water, dry it. Remove the zest from the lemon with a grater, set the remaining lemon aside, you will need it later.
3. Rinse the chicken well and put it in a soup pot. Wash all herbs and vegetables, cut the celery and chilli into medium pieces, peel the onion and cut into 4 pieces. Put everything in a saucepan, add half the mint, parsley and lemon zest.
4. Fill the contents of the pot with water and put to boil on the stove. Boil for about an hour until the chicken is ready, do not forget to remove the resulting foam.
5. When the chicken is cooked, pull it out, strain the broth through cheesecloth folded in several layers or a clean kitchen towel. This is necessary in order for the broth to be clean and beautiful. We will not need all the vegetables and herbs left over from the broth. Salt the broth, add olive oil for flavor and ground black pepper, put back on the stove, when the broth boils, put the rice in the pan.
6. Disassemble the chicken meat, removing the bones and skins.
7. Put the chicken pieces in the soup and cook with rice until tender, about 10-15 minutes. Squeeze the juice from the lemon and at the end of cooking, add the desired amount of lemon juice to the broth, tasting the soup to taste.
8. Finely chop the remaining half of the mint with a knife.
9. Add mint to soup when done. Ready-made chicken soup with rice and lemon, serve hot, pouring into plates. Sprinkle with chopped herbs, if desired, and garnish with a slice of lemon.Bon appetit!
