Restaurateur and MasterChef judge Vladimir Yaroslavskypreviously told about the secrets of cooking chanterelles, shared the secret of cooking new potatoes.
“New potatoes, poppy seeds and cracklings. This is a very unexpected combination of ingredients even for me. However, it is very tasty. Therefore, be sure to try cooking young potatoes with poppy seeds according to an old recipe from the Vinnitsa region. I really want us to keep such recipes and know the real taste of Ukraine”he wrote.
Ingredients:
- 800 g new potatoes
- 80 salo
- 40 g poppy
- 3-5 garlic cloves
- salt pepper
- greens (dill)Cooking method:
Pour potatoes with cold water for 20-30 minutes, then peel with the hard side of the sponge, removing only a thin skin;
- pour potatoes into a saucepan, pour cold water to the top, salt, bring to a boil and cook for 20-25 minutes over low heat;
- fry poppy seeds in a dry, well-heated frying pan for several minutes and pour into a bowl;
- finely chop the fat, fry it into cracklings, then reduce the heat and add finely chopped garlic to the fat and fry it over a very low heat for 10-15 seconds (the garlic should not change color);
- then we take out the potatoes and add them to the crackling;
- fry well for a few minutes and add poppy seeds;
- serve immediately with the whole ear!
According to Yaroslavsky, after boiling potatoes, you can simply fry them in cracklings, and add garlic later. But, it is tastier already for elderly potatoes.
“Be sure to make a salad and add your favorite herbs to the potatoes, dill is better. Bon appetit!” says the chef.
