Chip - in currant jam: an unusual recipe for “Swedish peasant women stew”

After TV presenter Grigory German told how to cook Sicilian-style caponata, the well-known culinary resource “Cuisines of the World” shared a recipe for meat stew from national Swedish cuisine.

Components:

• beef - 1 kg
• garlic - 2 heads
• shallots - 20 pieces
• smoked brisket - 200 gr
• bay leaf - 3 pieces
• currant jam - 2 tbsp.
• parsley - bunch
• salt, pepper - to taste

Cooking:

1. Cut the meat into small pieces, salt, pepper and mix with peeled garlic cloves.

2. Put a bay leaf on the bottom of a thick-walled pan, then put the meat with garlic. Pour in water to cover. Bring to a boil, remove the foam and simmer for 1.5 hours

3. Cut the breast into thin strips. Fry in a pan and put the onions in the melted fat. Fry them until golden brown. Add currant jam

4. Add the fried brisket with onions and currant jam to the finished meat. Simmer another 15 minutes. Sprinkle with parsley
