Does honey raise blood sugar?
Scientists from the University of Toronto conducted a study, the results of which were published in “Nutrition Review”. The study involved more than 1,100 people who consumed about 2 tablespoons of honey per day. It turned out that, despite this, the level of sugar in their blood did not increase, moreover, honey had a beneficial effect on both glucose levels and cholesterol levels in the body.
“These results are surprising because honey is about 80 percent sugar,” said Tausif Khan, a research fellow at the University of Toronto School of Medicine.
However, honey contains antioxidants, flavonoids, and phenolic compounds that have anti-inflammatory properties. In addition, they fight free radicals and protect body cells from oxidative stress.
Honey and cholesterol
Honey is rich in phenolic compounds and flavonoids, so it also affects lipid metabolism in the body. According to previous research, it can increase good HDL cholesterol and lower bad LDL cholesterol. It is possible that honey can also prevent blood clots and maintain proper circulation.
What is the healthiest honey?
Good quality honey has a firm consistency and may crystallize slightly. Sometimes it is dense and thick, like marmalade - this is a sign that honey is from a good apiary and is worth buying. Liquid honey may contain high amounts of sugar and is not a natural product. They are also often devoid of nutritional value. After collecting honey in the apiary, each honey undergoes natural crystallization, so good quality honey does not have a liquid consistency.
If we care about the health benefits of honey, we should use rapeseed, lime, lavender or buckwheat honey. In order for honey to retain its properties, it should be stored in a dry and dark room.
