Green salad: suitable for those on a diet

The name of this salad reminds us of spring, which is just around the corner. The main component of the salad is broccoli. This type of cabbage can be consumed in almost any form, but it is not advisable to use decoctions and fry, as in this case harmful substances are released, including carcinogens. It is best to blanch cabbage, so it retains as much nutrients as possible, says nutritionist Olga Shaevskaya.


  • broccoli – 500 g;

  • cucumber – 2 pcs.

  • green onions – to taste;

  • parsley, dill – to taste;

  • feta cheese – 50 g;

  • vegetable oil – 3 tbsp. spoons;

  • lemon juice.


Pour water into the pan and add 1 tbsp. a spoonful of salt (per 2 liters of water). The water should boil, then you need to throw the cabbage in and immediately turn off the stove. Cover with a lid and leave the cabbage in boiling water for 3-5 minutes. Then transfer it to a bowl of ice water to preserve the color and stop the blanching process.


Cut the broccoli the way you like, add chopped cucumbers, onions, herbs and feta cheese.

Drizzle everything with vegetable oil and lemon juice.
