Potato pancakes with cheese and ham: quick to prepare, perfect for breakfast.

A variety of potato dishes are very popular among Ukrainians. The well-known culinary resource Shuba told how to cook thin potato pancakes. They are prepared quickly and with affordable ingredients.

Pancakes are made by mixing potatoes with eggs, vegetable oil, yeast, sugar and milk. Then pancakes are fried from the mass, covered with filling and continue to cook for a few more minutes.

The classic filling is based on cheese and ham, but other ingredients can also be used. They can also be cooked with, for example, leeks, bacon and cottage cheese.

Ingredients (for 4 servings):

For pancakes:
• Milk 350 g
• Wheat flour 120 g
• Olive oil 30 g
• Parsley 10 g
• Salt 6 g
• Sugar 5 g
• Dry yeast 5 g
• Chicken eggs 3 pcs.
• Potato 1 pc.
• Dried thyme 1 tsp.
• Butter 30 g

For filling:
• Solid grated cottage cheese 160 g
• Ham 225 g

Cooking method:

Peel, wash and cut potatoes into pieces. Put them in a blender bowl and beat with eggs, olive oil, salt, pepper, yeast, sugar and milk until smooth. Pour the mixture into a bowl, add the chopped parsley, thyme and flour. Mix well.

Then pour part of the dough into a frying pan, greased with oil and well heated and fry on one side for 2 minutes. Turn over to the other side, put slices of ham and grated cheese on the pancake. Fold it in half and cook for 1-2 minutes. Prepare all pancakes this way and serve hot!
